Flower Power Fruit Salad

One of my favorite things about Scooby Doo is its distinctive ’60s aesthetic. Who can forget Fred and Shaggy’s bell bottoms or the Mystery Machine’s psychedelic paint job? Even the iconic color scheme associated with the show—orange, lime green, light blue, and purple—has a fun, hippy vibe to it. I wanted to capture that vibe in today’s side dish: a melon berry fruit salad that would look right at home at a 1960s-themed shindig. I cut cantaloupe, honeydew, and watermelon into flower shapes reminiscent of those found on the Mystery Machine and added some blueberries for extra color and flavor. To finish, I tossed it all in a homemade lemon honey dressing. The Little Mister was definitely a big fan of this recipe. Most of the watermelon and blueberries didn’t make it past the photo shoot! XD

Flower Power Fruit Salad: An AWR Original Recipe

INGREDIENTS:

  • 1 mini seedless watermelon
  • 1 mini cantaloupe
  • 1 mini honeydew melon
  • lemon honey dressing (make by vigorously whisking together the following: juice from 1 lemon, 3 tsp honey, 1/2 tsp white balsamic vinegar)
  • You will also need some 1 ½-inch and 2 ½-inch flower cookie cutters. I used a few from this Wilton cookie cutter pack.

 

Makes approx. 8 small bowls of fruit salad

 

INSTRUCTIONS:

  1. Trim the heels from each melon. Slice your melons into disks that are approx. 1/2-inch thick. Use your cookie cutters to cut out flower shapes. I recommend cutting most of the large shapes from the watermelon, since you don’t have to avoid a central cluster of seeds like you would for most of your cantaloupe and honeydew slices. However, you may be able to get some large pieces out of your first few cantaloupe/honeydew slices, since the seed cluster doesn’t show up right away.

  2. Place the melon pieces in a very large bowl and drizzle on the dressing just before serving. Gently toss to combine.
  3. Serve to your favorite meddling kids!
