Thanksgiving Throwback
As a holiday based entirely around food, Thanksgiving holds a special place in my heart. Yet as much as I love it, deciding what to cook can be a little intimidating. If you have a potluck-style dinner like my family, pretty much every relative has their “thing” that they make every year. Finding something traditional and festive that someone else isn’t already making can be a challenge. However, a great way to circumvent this problem is to make a dish that uses iconic Thanksgiving flavors in a new way. Most Redwall recipes are simple, hearty affairs, and dessert is no exception. In fact, sugar barely even makes an appearance in this recipe. Instead, apple pie spice walnuts are the star of this dish, lightly sweetened and accompanied by a generous helping of Redwall’s famous meadowcream. This dessert’s cozy flavors and simplistic feel make it the perfect way to end our Redwall menu. Enjoy!

Eeyore might complain about coming last in the recipe lineup, but we saved him for last because this dessert is extra special: we’re creating his dream birthday cake! Complete with candles, pink sugar, and icing, this cake is everything Eeyore envisions when describing the perfect birthday cake. The blueberry curd filling was my way of adding a little Wonderland uniqueness. And what better way to take advantage of blueberry season than giving our Winnie the Pooh dessert a little blueberry punch?

Man oh man, I had so much fun developing this recipe! Harry Potter features so many fantastic foods, but butterbeer is by far one of my favorites. It’s incredibly versatile–I’ve seen butterbeer cupcakes, cookies, and ice cream all over Pinterest. My original plan was to make butterbeer cupcakes, like those made by The Curvy Carrot, but since I recently made cupcakes for Alice in Wonderland, I decided to try a different route. The goal: something classically British that still captured the essence of butterbeer. And what’s more classically British than trifle? 😉
