Maple Walnut Butterscotch Muffins with Seedless Blackberry Jam

IF YOU GIVE A MOOSE A MUFFIN has always been my favorite book in the IF YOU GIVE A MOUSE A COOKIE series. It was the first book from the series my mom ever read to me, so it holds a special place in my heart. I love the autumnal setting, the adorable red sweater the moose wears, and the way his antlers stick out when he’s trying to hide behind the couch. It’s such a cute, cozy read!

As a nod to the book’s subtle autumn theme, I decided to make maple walnut muffins. I wanted to add a lil somethin’ extra to make them special, so I threw in some butterscotch chips. And of course, I made some blackberry jam to go with it! 😉

Maple Walnut Butterscotch Muffins with Seedless Blackberry Jam

INGREDIENTS:

  • FOR THE JAM
    • 4 cups frozen blackberries
    • 1/2 cup honey
    • 1 Tbsp lemon juice
    • 1/8 tsp salt
  • FOR THE MUFFINS
    • 1/2 cup butter
    • 2 cups flour
    • 1/2 cup granulated sugar
    • 1/4 cup brown sugar
    • 2 tsp baking powder
    • 1/4 tsp salt
    • 1 cup milk
    • 2 Tbsp maple syrup
    • 1 egg
    • 1 tsp vanilla
    • 1/2 cup chopped walnuts
    • 1/2 cup butterscotch chips

 

Makes 16 muffins and approx. 1 cup blackberry jam

 

INSTRUCTIONS:

  1. FOR THE JAM. Combine all jam ingredients in a saucepan over medium heat, stirring until combined. Bring to a boil. Reduce heat to medium-low. Thoroughly mash the blackberries with a potato masher or the bottom of a heavy glass. Simmer for 20 minutes, stirring regularly with a spatula and taking care to scrape the bottom of the pan.
  2. Remove from heat. Thoroughly press fruit mix through a wire strainer over a medium bowl, making sure to scrape the fruit pulp from the bottom of the strainer. Allow to cool in the bowl, then transfer to a sealable container and refrigerate until ready to use.
  3. FOR THE MUFFINS. Preheat oven to 375°. Melt the butter in the microwave and set it aside to cool. Line two muffin tins with cupcake liners (you’ll need 16 liners) and set aside.
  4. In a large bowl, whisk together the flour, sugars, baking powder, and salt. Set aside. In a medium bowl, whisk together the melted butter, milk, maple syrup, egg, and vanilla. Stir the wet mix into the dry mix. Stir in the walnuts and butterscotch chips until just combined.
  5. Fill the cupcake liners 3/4 full. Bake for 10 minutes, then flip and rotate the pans. Bake for 10-15 minutes more until the top springs back when firmly tapped with a finger. Transfer to a wire rack to cool.
  6. Spread the jam on the muffins and serve to your favorite moose.
