Peanut Butter and Jelly Pancakes

Today’s recipe is inspired by IF YOU GIVE A PIG A PANCAKE, part of the classic children’s book series IF YOU GIVE A MOUSE A COOKIE. I’ve made traditional pancakes on this blog before, so I wanted to try something fun and different. I decided to combine pancakes with a classic childhood food: peanut butter and jelly!

The pancakes are traditional buttermilk pancakes with melted peanut butter whisked into the batter and a bit of peanut butter spread on top of each finished pancake for some extra peanut oomph. But the real star of this dish is the homemade strawberry syrup. It’s super easy, makes a whopping 3 cups, and is sooo dang delicious. The secret is to use frozen strawberries, which are cheaper than fresh and frozen at peak freshness.

This is such a fun way to combine two classic foods. And I’m am in LOVE with this syrup. I can’t wait to make it again!

P.S. I had some leftover syrup so I served it with French toast bites and oh man I can’t get over how good it is! The sweet-tart strawberry flavor is the perfect balance for rich French toast.

Peanut Butter and Jelly Pancakes

INGREDIENTS:

  • FOR THE SYRUP
    • 4 cups frozen strawberries
    • 2 cups water
    • 3/4 honey
    • 1/4 tsp salt
  • FOR THE PANCAKES
    • 2 cups cake flour
    • 2 tsp baking powder
    • 1 1/2 tsp baking soda
    • 1/4 tsp salt
    • 3 eggs, room temperature
    • 1 1/2 cups buttermilk, room temperature
    • 1/4 cup peanut butter
    • fresh strawberries and peanuts, for garnish

 

Makes 14 pancakes and 3 cups strawberry syrup

 

INSTRUCTIONS:

  1. FOR THE SYRUP. Combine all syrup ingredients in a medium saucepan over medium-high heat. Bring to a boil, stirring occasionally. Turn down heat to medium-low and simmer for 30 minutes. Remove from heat and puree the fruit mix (either with an immersion blender or in a standard blender). Allow to come to room temperature. Transfer to a sealable container and chill until ready to use.
  2. FOR THE PANCAKES. In a large bowl, whisk together all the dry ingredients. Heat the peanut butter in the microwave for 30 seconds or until warm and melted but not hot (if it’s too hot, it will scramble the eggs). In a medium bowl or large liquid measuring cup, whisk together the peanut butter, buttermilk, and eggs. Whisk egg mix into dry mix until just combined, making sure to get all the dry ingredients scraped up from the bottom.
  3. On a lightly greased griddle or nonstick skillet on medium-low heat, cook 1/3 cup batter for 1 minute on each side. Top pancakes with strawberry syrup, fresh strawberries, and peanuts.
  4. Serve to the porcine protagonist of IF YOU GIVE A PIG A PANCAKE.
