Mrs. Hall’s Shortbread

A meal inspired by ALL CREATURES GREAT AND SMALL can only end with this dessert: Mrs. Hall’s shortbread! Although Mrs. Hall is known for dozens of delicious dishes, her shortbread is iconic. In fact, PBS even published an official recipe for these cookies! Naturally, that’s the recipe I used in today’s post (though I did spruce it up a tiny bit with a cookie mold!). The snowflake cookie mold used here is made by House on the Hill and was gifted to me by a family friend. This was my first time using a cookie mold, but it was super easy and fun. Definitely planning on using it again to make make Christmas cookies later this month.

I love how the finished cookies turned out. They’re super buttery, and the snowflake pattern shows up perfectly! My husband and son are especially big fans. Three cheers for Mrs. Hall and her shortbread! 😀

Mrs. Hall’s Shortbread

INGREDIENTS:

  • 8 oz (2 sticks) unsalted butter, room temp
  • 4 oz (approx. 1/2 cup) superfine sugar, plus extra for sprinkling
  • pinch of salt
  • 12 oz (approx. 2 1/2 cups) flour

 

Makes 9-15 shortbread cookies

 

INSTRUCTIONS:

  1. Preheat oven to 350°F. Line 2 baking sheets with parchment paper and set aside.
  2. In a large bowl, beat together the butter, sugar, and salt with a wooden spoon until well combined. Sift in the flour and gently mix until just combined, taking care not to overwork the dough. Gather the dough into a ball. Roll out the dough to 1/2″ thickness on a lightly floured surface.
  3. If using a cookie mold, lightly dust the mold with flour. Press the mold firmly into the dough, then cut out with a 3″ circle cookie cutter. Transfer the cookie to a baking sheet.
  4. Repeat Step 3 for remaining cookies. If desired, you can gather and reroll the dough to cut more. Cookies from the rerolled dough can be a bit tougher, but you can get as many as 6 cookies from it. And no one wants to see good dough go to waste!
  5. Bake for about 15 minutes or until set but still pale. Allow to cool for a few minutes on the pan. Transfer to a wire rack to cool completely. Sprinkle extra sugar on top.
  6. Serve to the residents of Skeldale House!
