Everyone knows there’s nothing a pirate loves more than gold, so I knew these Key Lime Coins from BHG were the perfect dessert for our Treasure Island menu—crisp and light with just a hint of lime and sweet powdered sugar. They’re just the thing to cheer you up when you and your pirate buddies have lost your treasure to that meddling cabin boy!
Key Lime Coins

INGREDIENTS:
- 3/4 cup softened butter
- 1/3 cup powdered sugar
- 1 1/2 tsp finely shredded Key lime peel
- 2 tbsp Key lime juice
- 1 tbsp water
- 1 tsp vanilla
- 1 3/4 cup flour
- 2 tbsp cornstarch
- 1/2 tsp salt
- 2 cups powdered sugar
Makes approximately 5 dozen cookies
INSTRUCTIONS:
- To start, beat your butter with an electric mixture for 30 seconds on medium speed. Then add your 1/3 cup powdered sugar, lime peel, lime juice, and vanilla and beat until combined (scraping the sides of the bowl, if you need to). Add the flour, cornstarch, and salt and beat it again.
- Take half the dough and roll it into a 1 1/2 inch thick log. Do the same with the rest of the dough. Wrap the two logs in plastic wrap and chill for 3 hours…or pop them in the freezer for 1 hour, if you’re impatient like me.
- When the logs are firm (but not frozen solid), remove the plastic wrap and preheat your oven to 400°. Cut the logs width-wise into 1/2 inch thick disks.
- Line some cookie sheets with parchment paper or wax paper and lay the disks 2 inches apart on the cookie sheets.
- Pop the cookies in the oven for 15-18 minutes or until the edges are slightly golden. While you wait, fill a bowl with the 2 cups powdered sugar.
- Allow the cookies to cool on the cookie sheets for approximately 5 minutes, then toss them gently in the powdered sugar.
- Place the powdered sugar coated cookies on a wire rack to cool completely. You can scarf them down right away or store them in the fridge in a sealed container. They like to fuse together when chilled, so I recommend storing them in a single layer or placing wax paper between the layers.
- And if you want a little extra lime flavor, don’t be afraid to grate some fresh key lime on top of the cookies just before serving.

I love Treasure Island! These look like the perfect treat to make to celebrate the end of summer before everyone goes pumpkin crazy.
