Sweet Potato Tigger Stripes: What Tiggers Love Best!

Posted June 19, 2014 by Alison's Wonderland Recipes in Book of the Month Recipes / 2 Comments

Tigger presented me with quite a challenge when it came time to include him in the Winnie the Pooh menu. He is a notoriously picky eater, turning up his nose at every food but one (extract of malt). So for this recipe, I drew my inspiration from Tigger as a character, rather than his taste in snacks. The result was a delightful batch of honeyed sweet potato fries with just a little whiskey kick, modeled after Tigger’s iconic stripes. Perfect for a day of bouncing!

P.S. The original honey-whiskey glaze recipe can be found here!

Sweet Potato Tigger Stripes

“‘Excuse me a moment, but there’s something climbing up your table,’ and with one loud Worraworraworraworraworra [Tigger] jumped at the end of the tablecloth, pulled it to the ground, wrapped himself up in it three times, rolled to the other end of the room, and, after a terrible struggle, got his head into the daylight again, and said cheerfully, ‘Have I won?'”
— The House at Pooh Corner

INGREDIENTS:

  • 2 large sweet potatoes
  • 1/4 cup wildflower honey
  • 2 tbsp whiskey
  • 2 tbsp brown sugar
  • 1/4 cup unsalted butter
  • kosher salt and pepper to taste

Makes approximately 32 sweet potato fries

INSTRUCTIONS:

  1. To start, peel the potatoes and cut them in half lengthwise. Then cut each half lengthwise again (this will create two “planks” from each half). Cut each plank lengthwise again at a slight angle into 4-5 strips.

Top Left: Halved, Top Right: Quartered (one is missing since I used it for the last step), Bottom: Strips
  2. If you want, you can taper the corners of the strips with a small knife to get the effect of a tiger stripe.

I recommend doing this before you heat them, so it’s easier to get a clean cut.
  3. Lay the stripes in a single layer on a microwave safe plate, and microwave them on high for 1 minute and 20 seconds.
  4. While you give the stripes a chance to cool, add the honey, whiskey, brown sugar, and butter to a sauce pan. Melt it all together on medium-high heat, stirring continuously, until the butter is melted.
  5. Using a pastry brush, coat the sweet potato stripes with the honey sauce and sprinkle on the salt and pepper.

Be generous with the sauce–Tigger’s don’t skimp!
  6. Grill the stripes for 3 minutes on each side or until the grill marks are strong.

  7. Enjoy while bouncing through the Hundred Acre Wood with Tigger in The House at Pooh Corner! 🙂
