Sesame Soy Tuna Steaks

A fantastic fish recipe, just in time for Lent! Naturally, the characters in TWENTY THOUSAND LEAGUES UNDER THE SEA eat loads of different kinds of fish—tuna, red mullet, angelfish, bonito, and so much more. I decided to go with tuna so I could try my hand at tuna steaks for the first time.

I went with a marinated version as an easy way to pack lots of flavor, looking at 5-6 different recipes for inspiration. The ones I wound up drawing from the most were by Sweet C’s Designs, Skinnytaste, and Bowl of Delicious. As a tie-in to my last recipe–Mock Turtle Soup–I added some lemon to my marinade.

These tuna steaks turned out amazing and were so easy to make. Delicate yet meaty, with complexity granted by the soy sauce/toasted sesame oil/honey marinade. And I loved the crunch of the sesame-crusted edges. Enjoy!

Ogion’s Fried Honey Basil Goat Cheese Bites

Welcome to our Wizard of Earthsea menu! I wanted to start the Earthsea series for years, and a few months ago I finally got around to it. It felt a little slow at first, though this may be due to the fact I read it as an audiobook and wasn’t in love with the narration style. However, I stuck with it, and around chapter 5 things REALLY picked up. Forbidden magic, shadow monsters, dragons—I was hooked!

I wanted to start off our menu with a nod to one of my favorite characters: Ogion, the reclusive wizard who lives deep in the wilderness and acts as Ged’s first master. His gentle guidance and wisdom are a great foil to the rashness of Ged’s youth. Since Ogion loves his goats and has been known to serve cheese to his rare visitors, I loved the idea of making a goat cheese appetizer. I hunted through Pinterest for inspiration and came across this recipe for fried goat cheese balls with honey. It sounded just right for Ogion, so I whipped up a batch with a couple changes to make it my own: I mixed chopped basil into the cheese for a bit of freshness and swapped out the original Honey Bunches of Oats coating for panko crumbs. You can definitely try the cereal coating if you want (it sounds delicious!); I just felt like a simple bread crumb was more in keeping with Ogion’s humble home.

I know goat cheese isn’t everyone’s cup of tea and fried goat cheese with honey may sound a little odd, but oh my gosh, guys. The FLAVORS. There’s a bit of tang from the cheese balanced with just the right amount of freshness and sweetness from the basil and honey. You get two different textures too: the crisp outer panko layer and the creamy inner cheese. The flavors and textures all come together to make a perfectly balance bite that, despite having so many distinct components, feels simple and fresh.

So even if you’re not big on goat cheese, I recommend giving this one a try. I DEFINITELY think Ogion would approve. 🙂

Tom Bombadil’s White Bread with Basil Butter, Honey, and Berries

Dear Tom Bombadil,

I never got over you being left out of the Lord of the Rings movies. You’ve always been one of my favorite Fellowship characters, quite possibly because you are such an enigma. Even Tolkien himself didn’t claim to know your whole story, though I admit I favor the theory that you represent Adam before the Fall. No matter what your origin may be, you undeniably bring a refreshing touch of charm and joy to a book series that definitely has it’s share of somber moments. As such, I wanted to show my appreciation for you by giving you a place of honor in my Lord of the Rings menu.

As I read Fellowship, the dinner you shared with Frodo and friends sounded sooo wholesome and delicious: white bread, butter, herbs, yellow cream, honeycomb, and berries. I simply couldn’t resist recreating it for myself! I used a white bread recipe developed by Red Star Yeast, which produced a beautiful, soft, smooshy loaf. It paired wonderfully with basil butter, fresh blackberries, and a light drizzle of honey.

A slice of this bread is the perfect start to a wonderful culinary journey. If you ever decide to travel outside your forest and visit the land of Chicago, don’t hesitate to stop by. I’ll put the kettle on, and we’ll munch on homemade bread as you tell me all about Old Man Willow and your adventures in your beautiful forest.

Strawberry and Grape Grinch Hearts with Yogurt Fruit Dip

Is this more of an appetizer than a side dish? Probably. As soon as I started planning my Grinch Who Stole Christmas menu, I knew I wanted to incorporate Grinch hearts, but I wasn’t exactly sure how. It wasn’t until early this past week that I decided on making fruit skewers with dip, and by then I’d already made Who Hash for my appetizer. So here they are as a side dish! In the end, all that matters is that they’re delicious, right? 😉

And they definitely ARE delicious—easy too! Just cut your strawberries into shape with a small heart cookie cutter and slice the ends off your grapes at an angle. Slide them on a skewer, and you’re done! The fruit dip is easy too. It’s got a tasty coconut yogurt base blended with cream cheese and honey for added creaminess and sweetness. It’s a sweet snack you can feel great about eating, Grinch or not!

Honey Glazed Grilled Peaches with Cinnamon Ice Cream

What would a James and the Giant Peach menu be without peaches? A travesty, that’s what. Of course, not just ANY peach recipe will do. I wanted to make something special but simple at the same time. After all, this is a kid’s book we’re talking about! Grilled peaches with ice cream came to mind, and I dressed them up just a little by glazing the peaches with honey and making homemade ice cream with the most glorious of all the spices: CINNAMON. The end result was sweet, refreshing, and delightfully simple. The perfect snack after flying across the ocean on a giant peach!

P.S. The cinnamon ice cream recipe included below is for a Cuisinart ice cream maker and is a slight variation on the vanilla ice cream recipe that comes with the machine.

Shepherd Book’s Goat Cheese & Basil Stuffed Strawberries: An AWR Original Recipe!

Howdy, folks! Today’s recipe marks the start of our first TV show menu of the year. It’s themed after one of my favorite shows: Firefly!

The show is set in a dystopian future when mankind leaves Earth to terraform the universe. The arm of the law doesn’t really reach the outer systems, which have taken on an attitude toward law and justice reminiscent of the Wild West. The show follows the travels of the crew and passengers of the spaceship Serenity.

In the first episode, the ship’s mechanic convinces a preacher named Shepherd Book to travel with them, and he pays for his passage with something unusual: a small box of strawberries.

Calcifer’s Sweet and Spicy Candied Bacon: An AWR Original Recipe!

Howl’s Moving Castle was actually the first Studio Ghibli movie I ever saw, and it’s main comic relief (the fire demon Calcifer) is still one of my all-time favorite Miyazaki characters. Though he can be a bit salty and sassy, Cal’s got a good heart underneath it all, so I wanted to pay tribute to him with a dish in our Ghibli menu.

When forced into making breakfast with the new cleaning lady, Calicifer famously curses her by saying, “May all your bacon burn!” So in honor of Cal (and the delicious, non-burned bacon he made with Sophie that day), I decided to make some sweet and spicy bacon!

Most Redwall recipes are simple, hearty affairs, and dessert is no exception. In fact, sugar barely even makes an appearance in this recipe.
