Early last month, we celebrated the Little Mister’s 1st birthday at his grandparents house. It was crowded, loud, and fun–everything a children’s party should be–as family came from far and wide to celebrate with us. The party had a Where the Wild Things Are theme, which I picked out an embarrassingly long time ago (aka literally weeks after I brought the Little Mister home from the hospital).

I figure there are only so many of his birthday’s I’ll get to make all the design decisions for, so we’re doing book themed parties for as long as he’ll let me! 😉 I thought it would be fun to make a menu based on all the foods we ate at the party, so that’s kind of what we’re doing this month. However, I’d be lying if I said this was EXACTLY what we ate at the party. That would require things going according to plan…and me cooking for almost 50 people…and to that I say HA.

I wound up making regular deviled eggs for the party, but these precious little egg boats are what WOULD have happened if I hadn’t forgotten to dye the eggs before I started filling them. I was kinda bummed that my vision never made it to the real party, but I whipped up a mini batch this week so I could share them with you all here on the blog. Maybe they’ll get a chance to make a little boy smile at one of YOUR parties! 🙂

Max’s Boat Deviled Eggs: An AWR Original Recipe

INGREDIENTS:

You don’t have to use olive oil mayo. I just like it for the lower fat content.
  • 1 dozen eggs
  • red gel food coloring
  • 1 cup mayonnaise
  • 1 1/2 tbsp mustard
  • 1/2 tsp salt
  • 2 dozen tortilla chips (these particular chips were perfect, since they’re proportion to the size of the egg made them look just like little sails)

 

Makes 2 dozen deviled eggs

 

INSTRUCTIONS:

      1. Place the eggs in a large pot and fill with cold water until covered. Add 2 tbsp white vinegar, if desired, to make the eggs easier to peel. Place the pot over medium heat, and as soon as it starts to boil, turn off the heat and cover the pot for 6-7 minutes. Drain the pot and fill with cold water. Rinse the eggs several times with cold water until they are room temperature.
      2. In a large bowl or pitcher, stir together 4 cups hot water, 1/4 cup white vinegar, and 24 drops red gel food coloring. Stir until the dye is completely incorporated. Fill 4 large mugs with 1 cup each of the hot water mix. Set aside.
      3. Peel the eggs. Cut them in half, removing the yolks and setting them aside. Place 6 egg halves into each mug (they should be completely submerged). Allow to set for 10-15 minutes, gently stirring them occasionally.

      4. In a bowl, mash and mix together the yolk halves, mayonnaise, mustard, and salt until smooth. Transfer to a piping bag fitted with a large star tip.
      5. Set the egg halves on a paper towel-lined plate. When they are dry, pipe the filling into the eggs.

      6. Top each egg with a tortilla chip.
      7. Serve to the King of the Wild Things before his long ocean journey home.

        These are really fun to eat! The boat acts like a little cup so you can scoop a bit of the filling onto the sail and eat it like dip. Yum!
